Instructions
Heat the olive oil in a large saucepan over medium heat.
Sauté the garlic and chicken with all the seasoning in the oil until the chicken is lightly browned.
Add the tomatoes and spinach, sauté until the tomatoes soften.
Fan the spaghetti out in the pot. Add the goat cheese and pour the water over everything.
Cover and reduce heat to medium. Cook for 15 minutes, stir at least every 5 minutes.
After 15 minutes, do a bite test to make sure the pasta is cooked and adjust the seasoning to your taste.
If the sauce in the pot isn't thick enough, cook on high heat for a few minutes (stirring all the while) until it thickens to your preference.
If the sauce is too thick, add in ¼ cup of water and stir it vigorously over high heat until a nice sauce forms.
