Ingredients
2cupsmedium grain riceor basmati
3cupswater
1can kidney beansdrained
1can coconut milk
1yellow onionfinely diced
5sprigsfresh thymestems removed and diced
3stalksgreen onionfinely diced
¼teaspoonground allspice or 5-6 allspice berries ground
3clovesgarlic finely diced or mashed
1scotch bonnet finely diced - or substitute habanero pepper
½teaspoonfresh gingerfinely diced
½teaspoonblack pepper
½teaspoonsaltplus more to your taste if desired
1stalkgreen onionthinly sliced for garnish (optional)
Instructions
Put everything in a large pot over medium-low heat.
Stir to mix evenly.
Cover and simmer for 30 minutes checking periodically that it isn't reducing too rapidly.
It's ready when the rice has absorbed all the liquid. Taste and adjust salt to your liking.
