Ingredients
1cupwhite riceideally short or medium grain
1small canblack beans
½cancoconut milk
1.5cupswater
1lime zest
1teaspoonground coriander
1.5teaspoonssalt
4tablespoonsfresh cilantro divided for cooking and for garnish
Instructions
Toss the rice, coconut milk, water, lime zest, coriander and salt in a pot and bring to a boil.
Reduce heat and simmer covered for 10-15 minutes or until cooked.
Remove from heat and let cool for about 5 minutes before adding the black beans - mostly so they don't stain the rice. Stir until combined.
