These chicken burgers are fully loaded from patty to toppings with Greek-inspired flavors of feta, roasted red pepper, olives, tzatziki and fresh veg.

These Greek-inspired chicken burgers are made with these feta and roasted red pepper chicken patties so the big flavor comes not only from the toppings but also from the patty itself. The patties are also amazing as part of plates or rice bowls.
These burgers aren't traditionally Greek of course but they really hit the Greek vibe right if you're after a little taste of Greece in burger form.
Ingredients


Chicken patties: The chicken patties are the star of the show in this burger, so we start with Greek-inspired red pepper feta patties. These are juicy and flavorful chicken patties made with feta, roasted red pepper, black olives and fresh herbs.
Buns: You'll also need buns (I recommend pita buns, especially if they're homemade) and toppings.
Fresh tomato, cucumber, and red onion: The makings of a Greek salad, thinly sliced and laid out on the burger for a bright, fresh element.
Lettuce: For crunch and freshness.
Tzatziki: A creamy and garlicky sauce for the burger. They would also be great with Dill Yogurt Sauce with Garlic or spicy Greek feta spread.
Instructions
Make Pita Buns?
If you want to make homemade pita burger buns to go with your burgers you'll need to give the buns about a 90 minute head start.
They are just the right shape for burgers, super soft and the pita flavor goes so well with the Greek-style burger.

You can also make pita buns a day ahead - just keep them in a sealed container so they stay soft.
For best taste, lightly warm them in a low oven (160 °C / 325 °F) for about 5 minutes, just until soft and warm without drying.
Step 1: Make the patties
Dice all the ingredients up super fine so they bind together enough to keep their shape while cooking. Once everything is cohesive, shape the mixture into 6 burger patties that are somewhat wider than you want them to be to fit in the bun (this is to account for shrinkage while cooking).
I like to use a 13 cm / 5 inch ring mold for this as it makes perfectly even patties that are a good size once cooked (no shrinking into little pucks).


If you want to make the burgers ahead of time, you can separate them with pieces of parchment paper and then either refrigerate or freeze until ready to use.

Frozen chicken burgers can be cooked directly from frozen over medium-low heat (about 6-7 minutes per side). Thawing overnight in the refrigerator gives more even browning and better texture.
Step 2: Prep the toppings
Slice the tomato, cucumber and red onion very thinly. Cut the lettuce into burger-sized shapes. Prep any sauces you want to make from scratch like Dill Yogurt Sauce with Garlic or spicy Greek feta spread.
Step 3: Cook the burgers
Cook the patties either in a lightly oiled skillet or on a grill. In both cases, cook over medium heat for 4-5 minutes per side, turning once. They should be well browned and cooked through with internal temperature of 75 °C / 165 °F.
Allow to sit for 5 to seal in juices while you assemble the buns and toppings.


Step 4: Assemble the burgers
Smear the inside of the pita buns with a generous dollop of tzatziki (or spicy feta spread, or both!). Then lay out the lettuce, thinly sliced tomato, cucumber and red onion.
When ready to serve, slap those burgers on there and enjoy!

Greek-Style Chicken Burgers with Feta Red Pepper Patties
Ingredients
red pepper feta patties
- 700 grams ground chicken 1.5 lbs, or use 8 boneless skinless chicken thighs diced finely
- 1 small red onion finely diced
- 0.25 cup roasted red pepper finely diced
- 0.25 cup feta finely crumbled
- 0.25 cup kalamata olives finely diced
- 0.5 cup fresh herbs mint, dill, cilantro, parsley or substitute 5 tablespoons total dried herbs
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- 1.5 teaspoons salt
- 1 tablespoon oil for frying (optional)
Buns & Toppings
- 6 burger buns ideally pita buns
- 1 cup tzatziki
- 6 pieces lettuce
- 1 tomato thinly sliced
- 1 small red onion thinly sliced
- 0.25 cucumber thinly sliced
Instructions
- Make the patties: If using whole chicken thighs, finely chop or grind them. Combine the chicken with all patty ingredients in a large bowl and mix just until evenly combined.
- Shape: Divide the mixture into 6 equal portions and shape into burger-sized patties. If you like you can use a 13 cm / 5 inch ring mold for extra precision.
- Cook: The patties can be cooked in a lightly oiled skillet or on a barbecue over medium heat for 4-5 minutes per side, turning once, until well browned and cooked through with internal temperature of 75 °C / 165 °F.
